  19. When the food handler is sick, she/he excuse himself/herself should not be allowed to work with any food.

  20. Step 3 (at the 3:40 mark) states that soap can kills germs after 20 seconds. This is not true. Soap does not kill anything, it bonds to both the foreign material and the water. The water takes away the soap attached to the foreign material so your hands are clean. No killing involved.

    1. who cares. it makes the germs go away bottom line. why is this information important.

    2. And no, Anti-microbial soap doesn’t really kill either. It has the potential to kill, but it takes so long that your hands have long been cleaned and dried before anything of any significance could happen with the anti-microbial soap.
